Flat Bubbly?

Wait! Before pouring the flat remnants of New Year’s Eve champagne down the drain, consider a few creative options for reinventing what’s left of that wine.

  1. Deglazing—Sauté a steak, then pour a little of the day-old champagne into the hot pan and scrape up the browned bits as the liquid boils. Whisk in a little butter, and you’ve got the makings for a delicious sauce.

  2. Vinaigrette—Substitute half the vinegar called for in your favorite French vinaigrette recipe with Champagne. Voilà! Instant champagne Vinaigrette.

  3. Sliced apples—Any dry white wine, including flat Champagne, will help keep apple slices from browning while making a pie or crisp.
