Pepper jack Cheese Sauce with French Fries

Makes: 6 servings (2 cups sauce) Total time: 10 minutes plus fries cooking time

| 1 | Tbsp. unsalted butter1 Tbsp. |
| 1 | Tbsp. all-purpose flour1 Tbsp. |
| 1 | cup milk1 cup |
| 1 | cup shredded pepper jack cheese (4 oz.)1 cup |
Prepare fries according to package directions.
Melt butter in a small saucepan over medium heat. Whisk in flour; cook for 1–2 minutes.
Gradually add milk, whisking until smooth. Bring mixture to a boil; reduce heat and simmer mixture for 5 minutes.
Whisk in cheese until melted. Cook sauce for 1 minute; keep it warm.
Spoon sauce over fries; serve with Chorizo Chili.
