Romaine Salad with Tomato Vinaigrette
A food processor will bring this vinaigrette together in a snap!

| 1 | cup thinly sliced romaine lettuce1 cup |
| 1½ | Roma tomatoes, sliced into wedges1 1/2 Roma |
| ½ | cup sliced cucumber 1/2 cup |
Purée chopped tomato, oil, vinegar, and shallots in a mini food processor or blender. Season vinaigrette with salt and pepper.
Divide romaine, tomato wedges, and cucumber between 2 plates. Drizzle salads with vinaigrette.
