Romaine Salad with Tomato Vinaigrette

A food processor will bring this vinaigrette together in a snap!

Makes: 2 servings; Total time: 10 minutes

PURÉE:
½Roma tomato, chopped 1/2 Roma
2Tbsp. extra-virgin olive oil2 Tbsp.
1Tbsp. white wine vinegar1 Tbsp.
1Tbsp. minced shallots1 Tbsp.
Salt and black pepper to taste
DIVIDE:
1cup thinly sliced romaine lettuce1 cup
Roma tomatoes, sliced into wedges1 1/2 Roma
½cup sliced cucumber 1/2 cup

Purée chopped tomato, oil, vinegar, and shallots in a mini food processor or blender. Season vinaigrette with salt and pepper.

Divide romaine, tomato wedges, and cucumber between 2 plates. Drizzle salads with vinaigrette.
