Dulce de Leche Sauce

This Mexican-style caramel sauce is perfect with the Chocolate Soufflés. It may be made ahead and reheated before serving.

Makes: ¼ cup; Total time: 10 minutes

¼cup heavy cream 1/4 cup
¼cup packed brown sugar 1/4 cup
Pinch each of kosher salt and ground cinnamon
Dash of vanilla extract

Boil cream, brown sugar, salt, and cinnamon in a saucepan, whisking constantly, until liquid is reduced to ¼ cup, about 3 minutes. Off heat, whisk in vanilla. Serve sauce hot.
