Gouda Mashed Potatoes

Yukon gold potatoes add buttery flavor and creamy texture.

2lb. Yukon gold potatoes, peeled and cubed2 lb.
2cups shredded Gouda2 cups
12cup buttermilk, warmed12 cup
12cup plain Greek-style yogurt12 cup
1Tbsp. chopped fresh chives1 Tbsp.
Salt and black pepper to taste

Boil potatoes in a large pot of salted water until fork-tender, 10–15 minutes. Drain potatoes and return to pot, stirring over medium heat to evaporate excess liquid, 30 seconds.

Stir Gouda, buttermilk, yogurt, and chives into potatoes, then mash and season with salt and pepper.
