Gouda Mashed Potatoes
Yukon gold potatoes add buttery flavor and creamy texture.

|2||2lb. Yukon gold potatoes, peeled and cubed|
|2||2cups shredded Gouda|
|1⁄2||1/2cup buttermilk, warmed|
|1⁄2||1/2cup plain Greek-style yogurt|
|1||1Tbsp. chopped fresh chives|
|Salt and black pepper to taste|
Boil potatoes in a large pot of salted water until fork-tender, 10–15 minutes. Drain potatoes and return to pot, stirring over medium heat to evaporate excess liquid, 30 seconds.
Stir Gouda, buttermilk, yogurt, and chives into potatoes, then mash and season with salt and pepper.
