Gouda Mashed Potatoes
Yukon gold potatoes add buttery flavor and creamy texture.

|2||lb. Yukon gold potatoes, peeled and cubed2 lb.|
|2||cups shredded Gouda2 cups|
|1⁄2||cup buttermilk, warmed1⁄2 cup|
|1⁄2||cup plain Greek-style yogurt1⁄2 cup|
|1||Tbsp. chopped fresh chives1 Tbsp.|
|Salt and black pepper to taste|
Boil potatoes in a large pot of salted water until fork-tender, 10–15 minutes. Drain potatoes and return to pot, stirring over medium heat to evaporate excess liquid, 30 seconds.
Stir Gouda, buttermilk, yogurt, and chives into potatoes, then mash and season with salt and pepper.
