Gouda Mashed Potatoes

Yukon gold potatoes add buttery flavor and creamy texture.

22lb. Yukon gold potatoes, peeled and cubed
22cups shredded Gouda
121/2cup buttermilk, warmed
121/2cup plain Greek-style yogurt
11Tbsp. chopped fresh chives
Salt and black pepper to taste

Boil potatoes in a large pot of salted water until fork-tender, 10–15 minutes. Drain potatoes and return to pot, stirring over medium heat to evaporate excess liquid, 30 seconds.

Stir Gouda, buttermilk, yogurt, and chives into potatoes, then mash and season with salt and pepper.
