Cheesy Macaroni

This quick version of mac ‘n cheese gets a kick of flavor from cilantro and scallions.

COOK:
11lb. dry elbow macaroni
COMBINE:
33cups shredded Cheddar
12 1/2cup minced fresh cilantro
14 1/4cup sliced scallions
Salt and black pepper to taste

Cook macaroni according to package directions; reserve 12 cup pasta water, then drain pasta.

Combine Cheddar, cilantro, and scallions in a large bowl. Add macaroni and pasta water, and stir until cheese melts; season with salt and pepper.
