Arugula Salad with shallot vinaigrette

Shallots take center stage in this peppery salad. Parmesan and lemon juice give it a fresh finish.

WHISK:
34 3/4cup thinly sliced shallots
11tsp. minced lemon zest
22Tbsp. fresh lemon juice
22tsp. honey
44tsp. white wine vinegar
Salt and black pepper to taste
14 1/4cup olive oil
TOSS:
33cups arugula
GARNISH:
Shaved Parmesan

Whisk together shallots, zest, lemon juice, honey, and vinegar for the vinaigrette; season with salt and pepper, let sit 15 minutes, then whisk in oil.

Toss arugula with vinaigrette.

Garnish servings with Parmesan.
