Scallion & Bacon Spaghetti

Spaghetti turns smoky with crumbled bacon and grilled scallions, then it's topped with a simple vinaigrette for freshness and tang.

88oz. dry spaghetti
66strips thick-sliced bacon, diced
WHISK:
22Tbsp. cider vinegar
11Tbsp. honey
11tsp. Dijon mustard
Salt and black pepper to taste
TOSS:
33bunches scallions, trimmed
11Tbsp. olive oil

Preheat grill to medium-high. Brush grill grate with oil.

Cook spaghetti in a large pot of boiling salted water according to package directions; drain.

Cook bacon until crisp; transfer to a paper-towel-lined plate and reserve drippings.

Whisk together bacon drippings, vinegar, honey, and Dijon; season with salt and pepper.

Toss scallions with olive oil and grill until charred and softened, 3–5 minutes. Chop scallions; toss with spaghetti, bacon, and vinaigrette.
