Marinara Sauce

Fresh tomatoes, basil, and oregano set this sauce apart from store bought bottled sauces.

Makes: 3 cups Total time: 45 minutes

11cup diced onions
11cup diced red bell peppers
22Tbsp. minced fresh garlic
14 1/4cup olive oil
44cups diced fresh tomatoes
22tsp. sugar
12 1/2tsp. red pepper flakes
Salt and black pepper to taste
14 1/4cup each chopped fresh basil and oregano

Sauté onions, bell peppers, and garlic in oil in a saucepan over medium-high heat until onions and peppers begin to soften, about 5 minutes. Add tomatoes, sugar, and pepper flakes; season with salt and black pepper.

Simmer sauce over medium heat, stirring occasionally, about 15 minutes. Off heat, stir in oregano and basil.
