Spiced Sweet Potato Fries

Watch the potatoes as they bake and turn as needed to prevent burning or sticking to the baking sheet. Remove fries as they get crispy.

Makes: 4 servings Total time: 40 minutes

22 medium sweet potatoes (1 lb.), peeled, cut into matchsticks
11Tbsp. olive oil
11Tbsp. brown sugar
11tsp. kosher salt
12 1/2tsp. each chili powder and black pepper
14 1/4tsp. ground cinnamon

Preheat oven to 450°. Line two baking sheets with foil.

Toss sweet potatoes with oil, sugar, salt, chili powder, pepper, and cinnamon.

Arrange potatoes on prepared baking sheets in a single layer and bake 10–15 minutes. Turn potatoes over and rotate sheets; bake until crispy, 10–15 minutes more.
